So the challenge I chose to undertake is known by myself, at least, as the Youngster Joey Challenge.
Here are the rules as I'm following them:
1. Your name must be Joey. 2. You must have a Rattata throughout the whole game. No other Pokémon can be used (except for use of HMs). 3. You are not allowed to evolve Rattata. 4. You may teach Rattata any applicable TMs. 5. You cannot use cheats of any kind. 6. You may attempt this challenge on any Pokémon version/game. 7. You may only have your Rattata with you while challenging the Elite Four.
Think of it as a mix of "Character Challenge" and "Single Challenge." I'm basing myself off of Youngster Joey, the trainer particularly infamous from the second generation. Therefore, I'm using a Rattata and only a Rattata (aside from my HM needs, for which I'm catching whatever Pokémon and just never using them in battle, even for revives). However, I'm not evolving Rattata; he will stay his scrappy self throughout the entire playthrough.

Rattata Lv. 20 Focus Energy Tail Whip Quick Attack Hyper Fang By this point, Rattata's done really well. He hasn't seemed to have much difficulty against trainers as of yet, or even the gym leaders. I just have to take care to heal him now and again, or replenish his PP in some cases.
Rattata Lv. 25 Mud-slap Tail Whip Quick Attack Hyper Fang Rattata, up to this point, has still done pretty well overall. After all, we've beaten Whitney and gotten the Plainbadge! But...we did run into a bit of a problem...
I must say, I find it to be extraordinarily coincidental that I stumbled across this thread while looking for Pokemon challenges, because I very recently did this very challenge myself in Pokemon Yellow, completing it February 25th. Rattata Lv. 34 Mud-slap Super Fang Quick Attack Hyper Fang
I had some issues fighting Morty due to his Gengar having Hypnosis and Dream Eater, and Haunter proved difficult with Spite (he repeatedly drained the PP of Mud Slap, the only move my Rattata knows to counter Ghost-type Pokemon).
I saw this challenge when you started and decided to do it myself, and tonight I beat Red with my level 88 Rattata knowing Return, Super Fang, Shadow Ball and Dig (really helpful for Morty, wish i would have gotten here sooner to tell you). Good luck to you!

If you haven't seen my signature, then you guys probably don't know about my Joey Challenge playthrough videos. Especially since this was my first challenge, I wanted to actually record it rather than write it down in the style of a story. What that means, though, is that my Challenge Playlist is pretty far behind where I actually am in the challenge. I didn't want to swamp my YouTube channel with a ton of Pokemon videos at once, so at first I was uploading one a day, then two, now three.
I don't want to spoil anything for anyone (if anyone's watching/following along lol), but I always post the uploaded updates here.
I think I'm going to take on either the Nuzlocke or Wedlocke challenge after this one, during which I'll probably still record it but I'll try to write it down in a semi-story format, too. That way, updates will hopefully be more frequent and perhaps more entertaining to the general populace, too.
